An island born from one of history's great eruptions, its villages balanced along the rim of a flooded volcano. Oia and Fira stack whitewashed houses and blue domes hundreds of metres above the sea, while below, black and red beaches trace the volcanic shore. Between them lie vineyards that have grown Assyrtiko in the ash for three thousand years.

The Caldera
The great flooded crater is what makes Santorini unlike anywhere else. Every village on its rim looks straight down into deep blue water, and every evening the sun sets directly across it.

Vines have grown in Santorini's volcanic soil for millennia, woven into low baskets against the summer wind, and the Assyrtiko they produce is dry, mineral and unmistakably of this place. Santorini's volcanic soil gives its kitchen a character of its own: sweet cherry tomatoes, creamy fava, white eggplant and capers that grow wild on the cliffs. Pair them with grilled fish and a glass of Assyrtiko at a caldera table and you have the island on one plate.
Weather & Getting Around
July and August are hot and very busy; April to June and September to October bring warm days and far more room to breathe. The island has an international airport and fast ferries from Athens, and distances are short, though caldera villages involve steps and steep lanes. A private driver or transfer takes the effort out of it entirely.
